Instructions to make Restaurant Style Baingan Ka Bharta:
- Turn on the gas, keep a wire stand & keep the gas on low flame.
- Now keep the Bengan on it & roast it till it’s skin becomes soft & its colour turn into black & it starts shrinking.
- After 5-6 minutes, when Bengan turns into black colour & its skin becomes soft, turn off the flame & keep it in a bowl or a plate.
- Now remove its skin, wash it properly & chop its root.
- Now mash Bengan mixture properly into Bharta.
- Chop Onions, Green Chillies, Ginger & Dhaniya Leaves very finely.
- Grind Tomatoes finely into purée in a mixer grinder.
- Now take a kadhai or pan, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.
- When smoke starts coming out of pan, turn off the flame & let the oil cool down a bit.
- After some time again turn on the gas & keep it on medium flame.
- Now add 1 Teaspoon Jeera & 1 Pinch Hing in it & let them sizzle.
- When they start sizzling, add finely chopped onions, Ginger & green Chillies in it & roast them till they turn into golden brown in colour.
- After 4-5 minutes, when they turn into golden brown in colour, add 1/2 Teaspoon Kashmiri Laal Mirch Powder in it & roast them for 1 minute.
- After 1 minute, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.
- After 5-6 minutes, when oil is completely released, add 1/2 Teaspoon Laal Mirch Powder & 2 Teaspoon Dhaniya Powder in it & roast them for 2-3 minutes.
- After 2-3 minutes, add 1/2 Cup Matar in it & cook them for 1-2 minutes till they become soft.
- After 1-2 minutes, add mashed Bharta mixture in it & mix it properly in Masala mixture.
- Now cook them for 4-5 minutes on low flame.
- After 4-5 minutes, add finely chopped dhaniya leaves in it & & mix them properly.
